I just want to understand if making video courses on udemy is ok if you are already working with some other organization as a full time job.

That's between you and your employer. If you are making Udemy courses during work hours on a topic that your company is paying you to do, then I can imagine there being some friction when you get paid for the Udemy courses. But if it's an unrelated topic and you do it on your own time, then I don't see an issue. Your employer can't dictate what you do with your free time.
