Use github repo for course demo

Hi,

I see there are some guided project in github which are part of university course. Is there any copyright issue or ethical issue to use those project as part of my full course.

The reason I want to use those as they are very organised, student can understand the core concept easily. However I am not sure if I am allowed to use those.
