There is no need for you to show your face on camera if you prefer not to. Many instructors choose not to appear on camera and instead use voice-over for their courses.

I’d be careful with AI generated content. Many such courses tend to be banned With no warning. I guess it depends on how much of the course is AI generated.
"Fully AI-generated courses with minimal or no instructor input" are not allowed.
