Hey @Cadiz - I've taken a number of courses where the instructor wasn't visible and found them to be very useful.
That said I personally prefer to be on-camera as it helps establish a better connection with students.
Also please be aware that using AI to generate your speech may be against Udemy's policies - so definitely safest to record the audio yourself.

Just a piece of advice
The Complete dependence on AI might be an issue, using Text-To-Speech engines is now approved as per the newest Udemy policy updates as long as it is not robotic voice and as much natural as it could be, TTS adoption is a great approach especially if you are not a native speaker, but still the content itself should be developed by the course author, carefully reviewed, crafted properly, and synced with audio, and provide value to learners.

I teach English to non-native speaking professionals in large international companies. I teach my learners how to sound more like native English speakers. This goes beyond the English words by addressing the emotion that speakers create with how they say the words.
My Udemy class is "Grow Your Career Faster — Best Business English Skills". The first two lessons give physical exercises to teach non-native speakers how to place their voices in the "power" position and how to get clearer pronunciation for every sound of English. These lessons are available in the free preview. They address the issue that language goes beyond the words. It involves the body. Like anything that involves the body, targeted exercises will make the words sound more authentic.
The other lessons that would be helpful would be in Section 4 — "The importance of emotion in business English". I particularly teach a quick way to get the listeners' attention that I call "Spice Words". In a few minutes, you can learn a simple, two-step technique that adds your emotion to the words.
