Export from Premiere Pro

I'm trying to export from Premiere Pro, but the only options are 4 x NTSC and 2 x PAL, which look absolutely terrible (and give a 2.5 GByte file, for a < 3 minute clip!?)

How do I get more presets for export types?

Also, why would that AVI file be so large?
