Hello, there.
When I record the video in one take, should I have to split the course by topic or small chapter?
Most of the courses in Udemy are composed of short courses.
I am curious I should record the class by short topic or one take.

You can check the structure of popular courses. Most of them have sections, and then individual lectures within each section. Example: 1 course, 5 sections, 30 lectures. Each lecture is usually short - no more than 10-15 minutes (rarely 20-30 minutes). That way, the course is easier to navigate.
If by "one take" you mean that you plan to record one multi-hour video in one go (non-stop), then you can split it later into smaller parts using any video editor of your choice. But it is probably easier to record each lecture individually.
