I can see some channels were instructors have their own names, and their linkedin profiles / bio on their channel.
I see other instructors that do not tell their name and who they are and remain anonymous.
What are the pros and cons to this?

I think most people who don't use their name use a company name instead. I would definitely not have a course by "anonymous" as it will erode trust from the student.
Why remain anonymous? When creating a course, you also create a brand that people will recognize and want to buy more from (if it's good).
My 2 cents.
