I'd like to run my course for a just few months every year as I'm a university student and I won't have time to respond to questions or do justice to my course during the academic year. As a result, I'm thinking of publishing my course at the start of each summer break and removing it at the start of my academic year. Is that possible?

You can take it down so no one else can enroll in it. However, Udemy offers a lifetime access guarantee so it will still be available to students who purchased it. I would not assume that you will get too many questions.
