There's no right month to launch your courses; the sooner you launch, the better!
There are a few months though, when Udemy promotes courses, and there are events such as 'Black Friday sale', when learners buy the courses a lot. But such sales hugely benefit established, good-quality courses in the Udemy marketplace. Newer courses don't get that much attention/noticed by the learners. And therefore, launch your quality course(s) as soon as you can!
